It seems like we can’t take Ethiopian coffees off the menu here at 8:28. And it makes sense; they’re usually highly rated, fruit-forward, and fun! This washed example is tons of fun with raspberry and apricot tea notes and a wonderfully balanced acidity presentation. Most Ethiopian coffees are naturally processed (where the beans are left out in the sun to dry and ferment with their cherries intact), so it’s fun to be able to see what a washed Ethiopian coffee can taste like!
